We achieved depth and complexity through a combination of winemaking methods. First, grapes were hand-picked, de-stemmed and crushed prior to undergoing cool fermentation in steel tanks and an extended maceration. Chianti in straw baskets is probably the most easily recognized product in the world of wines. It is a light, fresh, dry red made in a special manner. The traditional practice, called the Governo, consists of a slow refermentation of the wine. This second fermentation is effected by adding a 5-10% concentration of must in late December. The result of the Governo is increased glycerin, which enhances the fruity roundness and freshness of the wine.
